The Aglandau olive owes its name to its characteristic elongated, acorn-shaped appearance. It is one of the most widespread varieties in France. It is found throughout Provence.
Aglandau oil is known for its aromas of raw artichoke, almond or freshly cut grass. It has a medium to strong ardency (spiciness).
"Aglandau oil is my mother Mireille's favourite oil. She loves its green colour, its smell and its taste. A native of Provence and an excellent cordon bleu cook, she uses it in the preparation of hot dishes, such as a vegetable tian or artichokes à la barigoule (artichokes in sauce with bacon). Or to enhance the taste of a simple salmon steak cooked in court-bouillon" - Claire
