Our single variety olive oils typically from Provence
These monovarietal oils are pure olive oils made from one variety of olive. We produce four monovarietal oils with fruity green aromas exclusively using the varieties from our orchard: Salonenque, Grossane, Bouteillan and Aglandau.
Between October and December, each variety is harvested separately at its optimum stage of maturity and processed in our mill.
Each oil produced expresses the flavours specific to the olive variety from which it is made. Our monovarietal oils reveal in their raw state the wide range of flavours of the finest olive varieties of Provence. They are an invitation to a new sensory experience.
Our AOP Provence Mas des Bories
The "Huile d'olive de Provence" protected designation of origin derives its identity from the varieties of olives used in its production and its geographical origin.
Our AOP Provence olive oil is a blend crafted exclusively from our single variety oils and in strict compliance with the specification of the appellation.
The blend changes every year according to the flavour and typicality of each of the monovarietal oils used in its composition.
Our garden creations
Olive & Lemon: Inspired by the ancestral craftmanship of Italian millers, the olives are crushed with freshly picked organic lemons from our garden. During the mixing process, the olive oil captures the aromas of the lemon peel, offering a crisp freshness and natural lemony notes.
Olive & Basil: naturally aromatic, our basil olive oil is made by crushing together olives and basil leaves from the garden. These are harvested throughout the spring and summer and then kept cold until they are used in the mill.
Organic Provence Mas des Bories
Our organic extra virgin olive oil is produced in our certified organic mill.
It is a blend of local olive varieties, mainly Salonenque and Aglandau, grown in the Salon de Provence region.
Our quality rewarded
For over 15 years, our olive oils have been recognised for their high quality and have been rewarded with more than twenty-five prizes awarded by professionals in the sector in France and abroad.
