A terroir with a strong identity and its traditional olive grove
In a wild countryside, on the heights of Salon de Provence, the Mas des Bories olive grove stretches over an exceptional terroir, surrounded by Alep pines, oaks, broom and scrubland.
The olive grove is made up of 1700 trees between 30 and 50 years old. We cultivate local olive varieties adapted to the terroir such as Salonenque, Bouteillan, Grossane and Aglandau.
Our olive trees are protected by the hills overlooking the estate, thereby benefiting from an ideal micro-climate, both dry and sunny, favourable to the ripening of the olives.
Our entire production is under the Protected Designation of Origin (PDO) "Huile d'olive de Provence", guaranteeing total traceability of our products and proven know-how. know-how.
Our oil mill in the middle of the olive trees
Our mill takes part in the local ecosystem of Salon de Provence to perpetuate the tradition of the olive oil producers of Provence. In addition to producing our own oil from our own olive trees, it is also a local tool for all the olive growers in the region.
Installed and open to the public since 2011, the mill is constantly evolving to be a modern tool and to allow the extraction of olive oil as soon as it is collected. At the cutting edge of technology, it is a 2-phase mill from the best suppliers in Tuscany.
Its location at the very heart of the olive grove reinforces the optimisation and simplification of the treatment of our olives by avoiding any oxidation due to storage. This is a key element of our commitment to a very high quality oil. Our cold extraction process without any additives allows us to obtain the most natural and healthy extra virgin olive oil possible.

A typically Provençal rural landscape
The Mas des Bories estate is home to a vernacular heritage of dry stone constructions dating from the 19th century.
A peasant art par excellence, these constructions are made by piling up stones, without any binding material, and are listed as intangible cultural heritage by UNESCO.
They play an essential role in the conservation of the natural landscape. In fact, they preserve local biodiversity, offering a much sought-after habitat to the Provençal flora and fauna that live embedded in the stones.
Part of our profits go to their renovation and conservation.
